AFAIK - It would be quite difficult. QuakeED was written under a quite old version of NeXTStep (which begat OPENSTEP which begat Rhapsody which begat OSX). The way the system worked changed significantly at each generation though there were guides written on how to move projects from NS to OS. Currently the OSX version's documentation is somewhat sketchy and I'm having to rely on some books written about Rhapsody and OPENSTEP just to deal with the foothills of the learning curve.
A NeXTStep guru could probably do the job in a few weeks, I'm not one yet.
